History
Production on a larger scale began in the 1960s. The “Witamina” cooperative in Śliwno bought green cucumbers from farmers and pickled them in wooden barrels sunk in the Narew. The crops are grown traditionally, with natural fertilisers, and the pickling method is handed down from generation to generation. The cucumbers have been on the list since 2005.
Recipe
Cucumber soup made with pickled cucumbers
Ingredients
- 1.5 l vegetable or chicken stock
- 4–5 pickled cucumbers

- 4 potatoes
- 1 carrot
- 1 tablespoon butter
- 150 ml sour cream 18%
- a bunch of dill
- salt, pepper
Method
- Dice the potatoes and carrot and cook in the stock until tender, about 20 minutes.
- Grate the cucumbers on the coarse side of the grater and sweat in the butter for 5 minutes.
- Add the cucumbers to the soup and cook for 10 minutes. Pour in the brine gradually, tasting, until the sourness is right.
- Temper the sour cream with a few spoonfuls of hot soup and stir into the pot. Do not boil any more.
- Season with pepper and sprinkle with dill.
Where to taste and buy
In summer the cucumbers are sold by farmers from the Narew valley, and all year round at the markets in Białystok and the surrounding area.
